If there is one season I love to cook in, it is summer. Farmer’s Markets are bustling with vibrant produce, sweetened by sunshine. Stone fruit, cherries, and tropical fruits are at their peak ripeness. Gardens are in bloom. And the summertime hygge of sharing meals with friends and family with a picnic in the park, backyard BBQ’s, or a string light lit patio dinner brings so much joy!

With this summer mood in mind, start your day with a taste of the tropics and sunshine! Packed with sweet goodness and a zesty aroma, this recipe is one protein-packed snack! With over 20g protein and 10 g fiber, it is bound to keep you energized and fuller longer.

Papaya Lime Chia Boat

Serves 2

Gluten free, vegan, refined-sugar free

Time: 15 minutes

Ingredients: 
1 small ripe papaya, halved and seeds removed
8 tbsp chia seeds
2 cups plant milk
2 scoops Noosh Almond Protein Powder (or protein powder of choice)
2 tslp of liquid sweetener (maple, agave, monk fruit, date syrup)
Juice of 1 lime

Method:

Stir together chia seeds & protein powder in a bowl, breaking up any clumps. Add plant milk, 1/2 of lime juice, and liquid sweetener of choice. Let sit for 5 minutes to hydrate. Give it a stir halfway through to break up any clumps. For optimal “plumpness”, let the pudding set in the fridge for 1-2 hours or overnight.

To serve, squeeze remaining 1/2 of lime juice onto the papaya. Scoop the chia pudding into papaya center. Add toppings as desired and finish toppings of choice! I used fresh berries, banana, hemp seeds, almond butter, and vegan granola!

Enjoy as a snack or even a tropical breakfast!
