I absolutely love these little energy bites because they only take 10 minutes to make and made with common pantry staples (like oats and dates). Loaded with fiber, healthy fats, & protein, this is a perfect recipe to make-ahead to keep on hand for healthy snacking, curbing your sweet tooth, packing for a trail treat, or a pre-workout energy boost. And most importantly, they are absolutely delicious.
They are vegan, refined-sugar free, gluten-free, and can be easily be made nut-free by simply replacing the nut butter with tahini.

Chocolate Chip Protein Cookie Dough Bites
▸ Vegan, Jain, Vegetarian, Gluten-free
Makes: 15-20 bites
Time: 10 minutes
Ingredients: Dry: 1 cup almond flour (sub oat flour if nut allergy) 1 cup oat flour 1 scoop vegan vanilla protein powder 2 tbsp chia seeds 1 tsp salt Wet: 2 tbsp coconut oil 1/2 cup nut butter (PB/almond/cashew butter) or tahini 1 cup dates, roughly chopped 1-2 tbsp maple syrup or agave nectar 1 tbsp vanilla extract Mix In: 1/4 cup vegan chocolate chips

Method:
- In a bowl, whisk together all dry ingredients except chocolate chips.
- Add dates to a food processor and blend until you have a sticky dough. Add remaining wet ingredients and dry mixture from step 1 and blend until you have a cookie dough consistency.
- Fold in vegan chocolate chips. Roll into bite-sized balls. Let set in fridge for 30 minutes.
- Store in fridge in an air tight bag or container for up to 1 week, or freeze for later—but I guarantee these will be eaten up much sooner! 🙂

Feel free to experiment with other mix-in & superfoods for switching up the flavors like using chopped dried fruit, hemp seeds, chocolate protein powder!
