I absolutely love these little energy bites because they only take 10 minutes to make and made with common pantry staples (like oats and dates). Loaded with fiber, healthy fats, & protein, this is a perfect recipe to make-ahead to keep on hand for healthy snacking, curbing your sweet tooth, packing for a trail treat, or a pre-workout energy boost. And most importantly, they are absolutely delicious.

They are vegan, refined-sugar free, gluten-free, and can be easily be made nut-free by simply replacing the nut butter with tahini.

Method:

  1. In a bowl, whisk together all dry ingredients except chocolate chips.
  2. Add dates to a food processor and blend until you have a sticky dough. Add remaining wet ingredients and dry mixture from step 1 and blend until you have a cookie dough consistency.
  3. Fold in vegan chocolate chips. Roll into bite-sized balls. Let set in fridge for 30 minutes.
  4. Store in fridge in an air tight bag or container for up to 1 week, or freeze for later—but I guarantee these will be eaten up much sooner! 🙂
