Hi, I’m Priyanka.

I am a Board Certified Physician Assistant and founder of Pinki’s Palate, a Jain + vegan food blog promoting a healthy, compassionate diet to nourish the cells and the soul.

As a first-generation Indian-American following a Jain and vegan diet, I am motivated to create recipes with wholesome ingredients, simple instructions, and minimal time. From Pani Puri Hummus to Mexican Masala Jackfruit Tacos, I hope my recipes inspire you that a seemingly restrictive diet can actually be an opportunity to be creative and innovative with the abundance of plant-based goodness we have access to.

Since I first started this blog in 2012, we have grown into a global community of over 6,000 human beans aspiring to live and let live. Pinki’s Palate has also been featured in multiple documentaries by BBC, Topic.com, and Pearson Education on Jainism and the Jain diet.

Bridging my experiences as a healthcare provider and love for food, I am passionate about translating the science to the plate to create dishes that are not only nutritious, but delicious as well. As a retired NCAA Division 1 athlete and competitive gymnast, my mantra is to empower others to achieve their optimal health through an active lifestyle and enabling positive lifestyle changes. Here on Pinki’s Palate, I hope you find this holistic approach to wellbeing as a pathway to practice compassionate living and live mindfully.
