Can you believe it is already August?! If you’ve been following me on Instagram, I shared a post yesterday wrapping up July with National Avocado Day! Of course, celebrations call something a little sweet so I’m sharing a super simple, yet truly decadent recipe for a totally vegan and gluten-free recipe for Healthy Chocolate Avocado Mousse!
Avocados are a wonderful source of nourishment. They are known for heart-healthy monounsaturated (“good”) fat that helps lower LDL cholesterol (the bad cholesterol) and reduces the risk of heart disease. It is essential that the majority of fats in your diet come from monounsaturated or polyunsaturated sources.
One serving of avocado has 11% of your daily value of fiber intake, that is more than any other fruit! 😋 Fiber is important for healthy cholesterol levels, digestion, and stabilizing blood sugar. And of course, they are loaded with essential vitamins and potassium!
Now, I know you may be thinking I’m a little crazy putting avocado and zucchini in a dessert recipe…but I promise you, these two ingredients give you the silkiest texture and you can’t even taste them! Plus, it is an easy way to sneak in a serving of fruits and veggies for the kiddos and adults too.
Healthy Chocolate Avocado Mousse
▸ Vegan, Jain, Vegetarian, Gluten-free, Nut-free
Makes: 2-4 servings
Total Time: 5 minutes
1 large ripe Hass avocado 1/4 cup raw cacao powder 1/2 cup thick coconut milk (from the top of the can) or non-dairy milk of choice 1/2 small zucchini 3 tablespoons agave or maple syrup 1 pinch sea salt Optional toppings: fresh berries, chia seeds, pumpkin seeds, cacao nibs, sesame seeds
Blend all ingredients until smooth in a food processor or blender. Add splashes of non-dairy milk as needed to achieve desired texture. For extra protein, use 1 scoop of vegan chocolate protein powder instead of raw cacao. Serve right away or let set in the fridge for a thicker texture (~30 minutes). I like to serve in the avocado shell for a waste-free dish!
In good health and spirits,
